Tabouli Salad

Ingredients

 1.      1-2 cups uncooked Quinoa 

2.     ½- 1  bunch of Italian parsley or another finely chopped green

3.     2-6 green onions (pre cook if raw doesn’t agree with you)

4.     2-4 large tomatoes or 2 cups cherry tomatoes

5.     2-5 tablespoons olive oil or other oil of choice

6.     4-6 tablespoons of freshly squeezed lemon

7.     Salt and pepper to taste

8.     Options to add: Sesame seeds, hemp seeds, other vegetables, other greens chopped finely, beans or chopped chicken.

 

 Preparation

1.      Cook Quinoa according to directions rinsing well prior to cooking  to decrease bitterness

2.     Chop all vegetables

3.     Mix cooled Quinoa with vegetables

4.     Pour over oil and lemon

5.     Mix well and enjoy
